What programming language would be required to write a point of sale software platform for use in bars?

A fellow bartender and I are tired of using all the crappy touch screen programs out there in different bars and restaraunts and are looking into writing our own. We both have some computer programming experience but it's been a few years for both of us. Any help on how to get started?

1. Check out open source solutions first like http://sourceforge.net/projects/mozpos or http://sourceforge.net/projects/freepos It's probably easier to modify than to start from scratch.
